Sa fregula, is a typical Sardinian product, it is often called Sicilian cous cous, and as such can be used in salads and hot dishes where you would normally use cous cous.
It is somewhere between a grain and a pasta, with a slightly nutty flavour
It is hand made with semolina (the coarse part of the grain leftover from milling durum wheat) and water, and pre-toasted for nuttiness. Small and chewy like a grain, fregola makes a great base for pasta salads and sauced dishes alike.
Suitable for with a sauce as a main dish or with herbs as an accompaniment
